Steep hills and stairs can be a workout at this sprawling resort built into a cliff overlooking San Juan Bay's perfect crescent, but the views are well worth it. This lush complex includes two pools, two restaurants, 69 charming guest rooms (ranging from studios to spacious casas) and a newly renovated spa. Under new management, Pelican Eyes is working hard to attract upscale eco-tourists. General manager Gabriel Holt is buying lamb and goat cheese from nearby farmers for ramped-up cuisine at LaCascada and Bistro La Canoa, an open-air restaurant that may have the best view in San Juan de la Sur. Aloe and neem from the resort's gardens are used in treatments at Casa Tranquila, the clifftop spa with postcard views of the world's second-largest Jesus statue across the bay. pelicaneyesresort.com
