Michelin-star chef Hrishikesh Desai and former The Gilpin Hotel and Lake House managing director Karen Baybutt are to form a new management team at Cumbria hotel, Farlam Hall.

Desai will take up the role of chef patron and work alongside Baybutt to propel the 15th century manor house hotel into a ‘beacon of high-class hospitality’, as its owners take a step back from the business.

The new team will take over in April. The hotel’s resident manager Max Winder will remain in his role.

Desai, who won the coveted Roux Scholarship in 2009, left his role of executive chef at The Gilpin Hotel and Lake House in December 2022 after seven years.

He oversaw the hotel’s three restaurants, HRiSHi, Gilpin Spice and Gilpin Grill, acheiveing numerous Rosettes and a Michelin Star within 16 months.

Baybutt was at The Gilpin Hotel and Lake House for almost six years, moving to the position of managing director in July 2021. She will become finance director at Farlam Hall.

In his new role, Desai will give the menu at Farlam Hall’s Cedar Tree restaurant a ‘full makeover’, promising ‘simplicity with oodles of class and an unexpected twist to make guests smile!’

He said: “Farlam Hall is a very special place with genuine Cumbrian warmth, understated elegance and a passionate yet relaxed team. It is a place of storytelling, and the food, superbly sourced wines, spirits, beers and ales are central to that. Its kitchen gardens, poly-tunnels and honeybees provide an abundance of produce as does the wider environment of farmland and freshwater streams. We’ll be using these ingredients from these sources to their full potential.”

Baybutt added: “Hrishikesh and I have moved to Farlam Hall as a team and will take the next step together, we will work in partnership with the existing team to deliver a memorable, but beautifully uncomplicated, experience for guests.”

American entrepreneurs Joseph Walter and Kathy Mares purchased Relais & Châteaux & Pride of Britain hotels member Farlam Hall in 2019 and set about transforming its 12 rooms and six cottages.

Walter said: “We are delighted to welcome Hrishikesh whose reputation for simply outstanding food precedes him. His talent and tenacity will be pivotal in Farlam Hall achieving its goals in the coming years.”
