Guesthouse Hotels to launch new ‘fire and ice’ restaurant concept, primed for roll out
Guesthouse Hotels will launch a new restaurant concept called Pearly Cow at the end of March, which will boast a ‘fire and ice’ theme.
The hotel brand, which opened its first site in 2021, appears to be priming the Pearly Cow for a roll out and the debut location will be found at its No. 1 York property.
A spokesperson for the restaurant said: “Within the design, each Pearly Cow restaurant will feel connected to their locale through the choice of fabrics, wall coverings and tiling, as well as being individually styled with local art and accessories.
“At Pearly Cow in York, the team of coveted in-house designers fell in love with the contrasting lighter feminine elegance of its Georgian building and the darker masculine craftsmanship of the medieval architecture found throughout the city, which is replicated in the design throughout.”
The restaurant, which features a private dining room that can seat 12, promises to serve up a selection of high quality meat, vegetable and seafood dishes.
The ‘fire’ menu features meats and selected fish, seafood and vegetables cooked over a wood and charcoal Mibrasa Grill. Dishes include various cuts of steak, as well as half-grilled Whitby lobster with charred lemon and aioli, and a charcoal roasted aubergine with sweet and sour peppers, kale pesto and rose harissa.
The ‘ice’ options will focus on seafood, offering the likes of fresh oysters, potted crab and yellowfin tuna.
Pearly Cow will also serve two signature dishes: 45-day aged Hereford beef tartare and oyster cream with salted cucumber and Exmoor caviar, and an indulgent pudding of blackberry and lemon baked Alaska for two.
A handpicked wine list will feature classics, new world varieties and English sparkling, while the cocktail list will take inspiration from the local surroundings in York.
Guesthouse Hotels currently operates No. 1 York and No. 15 Bath. Sites in Margate and Brighton are confirmed to open in 2023 and 2024 respectively.
Pearly Cow York is scheduled to launch at the end of March and will be open from Monday to Sunday for breakfast, lunch, and dinner.
